Supper this week


It's been a long time, but I decided to share my meal plans for this week!

Monday: Clam chowder
Tuesday: Turkey, broccoli and rice casserole (I made up my own version with no canned soup and it is YUMMY if I do say so myself!)
Wednesday: {Thai}
Thursday: Roast chicken breast and sweet potato casserole (maybe some baked potatoes, too?)
Friday: Refried bean enchiladas 
Saturday: ??
Sunday: Honey-baked chicken and rice

I haven't figured out Saturday yet, but something very exciting is happening this week! A friend from church is bringing us some venison on Wednesday! I'm hoping a long-term agreement will work out, since he's an avid hunter and I would just flip for a venison source! Maybe we will try something with deer meat on Saturday. :)

Supper this week.


This was our pizza last week! I didn't try grilling it, but I was still quite happy with how it turned out. I received a pizza stone as a wedding gift but always struggled with getting the pizza onto it, so my sister bought me a pizza peel for Christmas! Somehow, this was the first time that I'd used it and had it really work well. It was pretty yummy, too. It probably would have had an even chewier, more authentic crust if I'd used bread flour, but I went with just regular whole-wheat flour this time.


It's looking like an easy week for me, cooking-wise, because we have a party on Friday evening and a wedding on Saturday. Last night, John grilled chicken and I boiled up some teeny fingerling potatoes which my Mom-in-law had dug up a bit prematurely, since they were preparing for a big Europe trip. (They're somewhere over there right now! So exciting!). Dad recently told me that the barbecue marinade recipe which I have from his mother is called Cornell style. It is soo yummy....here's to upstate New York! Of course we had some salad to round out that meal. Gemma is becoming a great little salad eater, and I'm so proud of her! We used to have to really push her to eat the three or so bite-sized pieces of lettuce or spinach I'd give her, but now she happily chows down about twice that amount independently. I've heard that children need to try new foods more times than adults in order to develop new tastes, and I think it's true in her case!

Do your kids eat salad? We let Gemma have raisins on hers, because that's how we like ours. I think the raisins do help. :)

Supper this week

How has another week gone by already? I have half a post started that I meant to finish last week, but here's this week's super quick meal plan:

Monday: Pizza and salad (the dough is already rising!)
Tuesday: Chicken and veggie stir-fry with rice 
Wednesday: {Thai}
Thursday: Hamburgers and sweet potato fries
Friday: Chicken Marsala with cacio e pepe
Saturday: Chicken tikka masala from the freezer 

Looks like a chicken-heavy week! Last week's spaghetti carbonara was pretty yummy but a bit globby, and reminded John of macaroni and cheese. I have some work to do on it, but I'm looking forward to improving it! And the beans I ended up having on Saturday...well, I didn't start them until about 5:30 PM (hadn't even soaked them, so I had to do the quick-soak method), and they were still a bit chewy when we finally sat down to eat at 9:30. John asked me why I hadn't just used canned beans, and while I'm not ready to admit long-term defeat with dried beans, at the moment I was sort of wondering the same thing myself.

I am so excited for fall! (Who is surprised? :)) But for now, I'm hoping we can make the most of the warm weather by doing a bunch of end-of-summer grilling! I really want to try grilling pizza, but I'm a little afraid to. Have any of you tried it?

Supper this week

Well, it's Tuesday and I'm only now getting up my weekly menu post! Yesterday was extra-busy because we had some old friends over for dinner kind of at the last minute, and making blueberry pies and picking some extra things up at the grocery store was just more important than blogging. ;) We had a great time together, though!  Anyway, we just fed them what I was already planning on having for us, only in larger quantities (they have seven children!!). It worked out really well, and here's the rest of the week:

Monday: Oven tacos, Mexican rice, corn, melon, blueberry pie 
Tuesday: Spaghetti alla carbonara (haven't gotten to this yet, so tonight is the night!)
Wednesday: {Thai}
Thursday: Tilapia and rice
Friday: Black beans and rice
Saturday: Macaroni and cheese

We always have some form of salad or veggie (usually broccoli) or both...tonight will be kale. :)

Supper this week

I think it's time to re-inaugurate sharing the weekly meal plans! It's always satisfying to have a plan in place, even though I will happily set it aside when my husband says occasionally at 5 pm, "Let's walk to Moe's!" Here's this week:

Saturday: Spaghetti alla carbonara (this will be an experiment! I love a good carbonara and plan to consult Southern Living and a recipe online that I pinned).

Maybe this will be my last week of meal plans for a while?  That would be nice!  I think . . .

We finally had a birthday dinner for Gemma on Friday night, and hopefully I'll be able to share some photos soon!  We had ham, so now we have leftover ham for sandwiches, for frying up with breakfast, etc.  Hence Monday and Tuesday's themes . . .

Tuesday:  Lentil Soup (with the ham bone)

Thursday:  pizza (hmm, maybe I should pick up some pineapple and make Hawaiian pizza!)

Last week's plans got adjusted a bit, since it turned out that I didn't need to cook for as many nights as I'd planned.  :)  Some things just got pushed to this week . . . 

Monday:  pancit
Tuesday:  Roast chicken breast, stuffing, squash
Wednesday:  White chili for lunch (we're having company, yay!) and take-out Thai for dinner
Thursday:  Refried bean enchiladas
Friday:  Pot roast with potatos, carrots, etc.
Saturday:  Shrimp scampi
Sunday:  {We'll be eating with friends at their home, Lord willing!}

Supper this week (and next)



It's Wednesday!  Oops!  I still want to share my meal plans, though, because I'm excited about them!  And I've mostly planned through next week, too, though things are always subject to change when I plan that far in advance.

So, for this week:
Monday:  I roasted some bone-in chicken breasts with sliced potatoes, carrots and parsnips!  It was truly exciting to find a special on parsnips Trader Joe's, and reminded me of the delicious roasted veggies Mom used to make during her brief stint working at an organic farm.  She got to take home lots of yummy second-rate produce that they couldn't sell at the farmer's market, and I learned a lot about veggies!  Turnips are wonderful, too, and would have been quite yummy in this dish!  I couldn't remember how Mom used to season hers, but I used some old stand-bys--salt, pepper, garlic, sage.  And I made way too much, so we've had leftovers for fried potatoes, maybe some hot chicken sandwiches today, and just plain [microwaved] leftovers.

Tuesday:  We had chicken marsala with cacio e pepe (and I wished I'd used more red wine than white.  Oh well!)

Wednesday:  {Thai}

ThursdayBaked potato soup!  This is another exciting thing about this week!  I baked my potatoes while Monday's supper was roasting, and I'm planning to make a double batch of the soup so I can freeze some for when the new baby comes!  (And even though the recipe is from Annie's Eats, I was inspired to try it by the path-less-traveled, so, thank you, Elizabeth!)

FridaySalmon and mashed potatoes.  My sweetie is getting tired of salmon and rice, so I'm trying to mix things up a little bit . . . he's asked me to help him get some good fats in other ways.  ;)  Next week we'll skip the salmon.

Saturday:  Hopefully we're going to a couples'-night-out with chilli and a bonfire!  We're bringing crackers and shredded cheese.

SundayBeef enchiladas!  I haven't made enchiladas in quite a while, so this is exciting, too!

Next week: 
MondayClam chowder!  Another warm fall recipe!  And hopefully we'll freeze some of this, too!

There we go!  And, at some point soon we'll probably be eating the squash which is part of my little dining room centerpiece at the moment.  We didn't get a pumpkin this year . . . I guess I wasn't feeling too anxious for one!  And now that we have an Aldi near us, I can easily get pumpkin for $.99 a can, despite the BPA and all that.

Supper this week (and part of next!)


Well, yesterday I pulled some tortilla dough out of the freezer and cooked up enough for the three of us, then cooked up a chicken breast in homemade taco seasoning (recipe found via pinterest!).  We added lettuce, cheese, salsa and refried beans (canned this time) to our tacos, and they were yummy!

And today I roasted a chicken.  I haven't done that in a while.  :)  This time, I stuffed it with an onion and a  little bouquet garnier of rosemary and thyme (my remaining living herbs!).  I rubbed it down with some olive oil and sprinkled on dried parsley and sage. The potatoes and vegetables got drizzled with olive oil, herbs, salt and pepper, too.  It smelled so yummy cooking!  It's so much fun that fall is coming, and oven-season and chili and stew season is almost here!

So, the plan for the rest of the week is . . .

Wednesday:  {Thai}
Thursday:  Lasagna (with noodles and riccotta leftover from Sunday!)
Friday:  Salmon and Rice
Saturday:  Chicken pie?  Or something else with chicken leftover from today.
Sunday:  We're having company!  We've found that it's easy for John to grill chicken and have mashed potatoes, salad, probably carrots, and probably some sort of pie for dessert.
Monday:  Rachel Ray's pasta with bacon, tomatoes, and cheese (but I use red pepper instead of the tomatoes; just our personal preference)

I guess this week is a bit chicken-heavy!  But it is my sweetie's favorite meat . . . and it's cheaper than beef . . . and doesn't have pink slime in it . . .

I share my plans partly for accountability, and partly to share my ideas!  But I'm always interested in new ideas!  What are you making for dinner this week?

Sunday:  We're helping with a college lunch at church, so I'm making lasagne and brownies!

We never made beans last week because John took us to Moe's!  That's always a fun treat!  So, they're on the menu again for this week, once I do major grocery shopping on Thursday and get everything we need.  :)

Thursday:  Not-Sagna Pasta Toss (from Rachael Ray's Express Lane Meals)
Friday:  Hamburgers with Sweet Potato Fries (and I want to make English muffins from scratch for the hamburgers and for eating with my eggs this week!  This will be an experiment!)
Saturday:  Black Beans and Rice
Sunday:  TBD . . . probably grilled chicken

So.  We've already had the mushroom moussaka.  It took me hours to make, and when it was all said and done, I was wondering why I had decided to do that to my husband.  I love eggplant, but he doesn't . . . and to make matters worse, this was a vegetarian version which basically loaded up the red sauce with mushrooms instead of ground beef.  Sorry, sweetie . . .

At least on Thursday we're having one of his favorite meals ever.  :)  And I'm really excited to try making English muffins!  I think I'm going to use the recipe from More With Less.  They always look so good at the store, but then I read the label and want to faint . . .

Thursday:  Pizza (mushroom and pepper for me, pepperoni on John's half, and I may finally try this crust recipe)

The pancit got moved to this week because we didn't end up having the pancit last week.  I was tired and just made some pasta with jarred sauce and threw some sausage in it.  The crock pot macaroni and cheese was a mixed success; John actually loved it but I wasn't as thrilled.  I think I prefer recipes where the noodles are pre-cooked.  And yesterday afternoon, we had honey baked chicken over brown rice.  :)

Supper this week!

We stuck to our plans last week!  The only change was that we didn't actually eat the chicken cordon bleu yesterday, because at the last-minute we were invited to lunch by a family from church.  :)  It's all cooked and in the fridge, and we'll eat it at some point.

And . . . that's it!  Lord willing, on Friday morning Gemma and I fly to NY for my sister-in-law's baby shower. She's expecting twin girls this summer, and we are filled with joy for her and John's brother.  :)  I'll probably pull some pork barbecue out of the freezer for my sweetie while I'm gone, but he already has plans for Sunday afternoon and also tends to like eating out.  :)

Supper this Week

Happy Tax Day!

Last week, I'd planned to make Chicken Tikka Masala on Saturday night, but we ended up just have ziti and jarred sauce!  Thankfully, my husband is always up for pasta!  We were kind of busy getting the house and dinner ready for our company on Sunday, to whom we served baked spaghetti, salad, easy french bread (made into garlic bread!) and chocolate cake.  Oh, and green beans for the babies.  It was yummy.  :)

Supper this Week


I thought it might be fun to start sharing my meal plans.  :)  It might not happen every week (probably won't!) but here's a start!

I usually check the next week's ads on Wednesday, plan the next week's meals and shop on Thursday.  And we usually aim for one fish meal, one bean meal, and possibly one additional meatless meal, especially if the bean meal isn't a meatless meal, like chilli, for example.  And I'm a very spoiled wife in that we always order Thai food on Wednesday nights.  Yes, that's the square I always fill in first.  ;)

Monday:  Black beans & rice
Tuesday: Pancit (A Filipino stir fry/noodle dish)
Wednesday: {Thai}
Thursday: Salmon & rice
Friday: Something with our leftover ham from Sunday
Saturday: Chicken Tikka Masala (& rice)
Sunday: Chicken Cordon Bleu & rice

Of course, it's always subject to change.  In fact, we'll probably do something different for next Sunday since we're now planning on having company.  But we'll see.  :)

Do you plan your meals?  Do you assign them to specific days?  Hmm, it seems that we're a bit heavy on the rice this week!  I hadn't noticed until now. And now I think I need to go get those beans cooking while the baby is still asleep.  ;)
